Mountain Muesli

A Quick and Hearty Breakfast

prep time:  15 minutes

soaking time: overnight


4 cups rolled grain flakes (any combination of oat, rye or spelt)

½ cup almonds, chopped

¼ cup sunflower seeds

¼ cup pumpkin seeds

¼ cup dried currants, optional

¼ cup dried pear, optional

¼ cup dried peaches, optional

1 teaspoon cinnamon

½ teaspoon cardamom


In a large bowl, combine all ingredients. Transfer to an airtight container and store for up to 2 weeks in the refrigerator.

To serve, transfer desired amount (approximately ¾ cup) of muesli into an individual serving bowl.  Soak muesli overnight in just enough water to cover the muesli.  In the morning add yogurt or nut milk, and flax oil.

For a variation, omit dried fruit in preparing the muesli, instead top with fruit compote or fresh fruit after muesli has been soaked.

Makes 8 – 10 servings
