A cleanse friendly recipe …
This Tomato Rice Salad is a variation of the Middle Eastern version of tabouli. The difference is that this salad uses rice as the whole grain. Serve this salad on it’s own or on a bed of lettuce greens. This makes a great cleanse recipe!
- 1 cup brown rice, cooked and cooled
- 1 cup diced tomato
- 1/3 cup sunflower seeds
- 2 tbsp. chopped green onions
- 2 tbsp. extra-virgin olive oil
- 2-3 tbsp. lemon juice
- 2 tsp. fresh chopped mint or 2/3 tsp dry mint
- ½ tsp. salt
- a pinch of pepper
In a medium bowl combine all ingredients together and gently mix. Adjust seasoning and enjoy!
