SUMMER CITRUS GREENS

Greens provide the nerve supporting B-vitamins, while walnuts give you the Omega 3 fats to help balance out the rich treats we sometimes indulge in during the summer.  The vitamin C in the citrus will keep your immune system strong after all those late summer nights!

3/4 cup (185 ml)
1/4 cup (60 ml)

Extra Virgin Olive Oil
Apple Cider Vinegar
Garlic Cloves, minced
Honey
Fresh Orange Juice
Fresh Lemon Juice
Fresh Basil or 1 tsp (5 ml) of dried basil
Romaine Lettuce
Fresh Baby Spinach
Cucumber sliced
Red Bell Pepper, sliced
Tangerines, peeled & sectioned
Walnut halves

Directions:

  1. Whisk together first 7 ingredients in large salad bowl
  2. Layer lettuce and next 4 ingredients over dressing
    (Cover and chill up to 12 hours, if desired)
  3. Add walnuts, and tossMakes 6 to 8 servings
